Rhys’ resume reads like a roll call of Sydney’s best: from cutting his teeth at Mr Wong under Dan Hong, to the opening crew at China Lane, sharpening with Brent Savage at Bentley Bar, and stepping into the spotlight at Kid Kyoto with his offbeat, Japanese-inspired cooking. These days, he’s holding down the pass at Matt Moran's Rekodo.
The story goes back further, though. Robbie and Rhys first crossed knives at China Diner Bondi, before teaming up again to launch the OG Light Years in Byron Bay. Now, they’re back together and bringing their shared history (and a little mischief) to the Moonlight kitchen.
